Blackberry Pie

I have only just created this recipe, blackberries are in season at the moment and I am lucky enough to have an abundant amount on my own property. Before you even start to read the recipe don’t scared of making your own pastry, give it a go! Not making your own is worse than trying and failing! I have left the recipe rather open the amount of pastry will depend on if you are making a big pie or little ones and how many blackberries you have.

Pastry Ingredients:

525g (31/2 cups) plain flour
215g (1 cup) caster sugar
250g chilled butter, chopped
1/4 tsp salt
2 eggs

Method:

Place the flour, sugar, butter and salt in the bowl of a food processor and process until the mixture resembles fine breadcrumbs. Add the eggs and process until the dough just starts to come together. Shape into a disc. Cover with plastic wrap. Place in the fridge for 1 hour to rest.

Filling Ingredients:

Blackberries

Method:  

Roll out pastry to desired thickness and place in desired pie tin and fill with blackberries.
Place in a preheated oven of 180c and cook till golden brown.
