Mushroom and Chickpea Stroganoff

This recipe is one of my favourites… I hadnt cooked it in a while and had forgotten how much I LOVE it.

What you need…

  • 2 tablespoons olive oil
  • large onion, chopped
  • 2 cloves garlic, crushed
  • 2 teaspoons sweet paprika
  • 2 cups mushrooms, chopped
  • 3 tomatoes, chopped
  • 2 cups cooked chickpeas
  • 2 tablespoons tomato paste
  • 1/2 teaspoon mustard powder
  • 1 teaspoon each of dill, chives and parsley, chopped

What you do…

  1.  Heat oil and saute onions and garlic until soft
  2. Add paprika and cook for 1-2minutes
  3. Add Mushrooms and cook until just soft
  4. Stir in tomatoes, chickpeas, tomato paste, mustard powder and herbs
  5. Cover and simmer gently for 15minutes

Serve with rice, and if you like sour cream as well 🙂
