2 tablespoons oil
1 onion, chopped
3 sticks celery, chopped
1 clove garlic
1 cup red lentils
4 cups water
2 cubes vegetable stock
* Serves 6
1) Heat oil in large pot, add the onion and fry until softened.
2) Add the remaining ingredients with salt, peper, nutmeg, bay leaf and stock.
3) Bring to the boil, cover and simmer for 30 to 25 minutes, stirring occasionally.
4) Check seasoning and serve as it or blend to a smother consistency (Remove bay leaf before doing this!).
