Cauliflower CousCous

I love cauliflower…. its one of my favourite vegies. This recipe is great as a side dish for a main meal… I had it with vege patties and roast vegies, but it would also be enjoyable with fish and chicken.

What you need:

1/2 head of cauliflower

1/4 cup parmesan cheese

1 tablespoon of olive oil

pinch of sea salt

less than 1/4 cup of low fat milk

two or three pinches of black pepper

teaspoon of  thyme, fresh or dried


What you do:

  1. cut the cauliflower head into smaller pieces, then either blend or grate (with a cheese grater) into finer pieces…. but not too fine, you still want it to be chunky
  2. place all ingredients in a fry pan and simmer until warm all the way through
  3. remove from heat and serve…

I must warn you though, if you choose to grate the cauliflower, it can be quite a messy experience as pieces fly everywhere. Make sure you grate into a large bowl!
