Scallop Potatoes

A quick an easy meal!


Ingredients: 

Potatoes
Onion
Butter
Milk
Cheese
Black Pepper

Method:

1) Steam the whole potatoes till soft
2) Caramelize the onion in butter
3) Slice potatoes
4)  Layer in greased dish, potatoes, thin layer of cheese and black pepper. In about the middle place a later of the caramelized onion.
5) Finish with a layer of cheese
6) Melt butter and milk together, pour about 2 teaspoons over the top (if the same size as mine), or just enough to add some liquid to keep it soft as it cooks
7) Enjoy!

I know the instructions are a little vague, but it can be made in large or small quantities, and really you can’t go wrong with the ratio of ingredients!
