Banana Cake

I find many recipes for Banana Cake are gluggy and far too moist…. however this recipe I found is perfection.

It is great for using up the bananas that have become too ripe and too brown to eat.

What You Need…

  • 1/2 cup Butter
  • 1/2 cup Caster Sugar
  • 1 teaspoon Vanilla Essence
  • 2 Eggs
  • 3 small Bananas
  • 1 teaspoon Bi-carbonate Soda
  • 50ml Milk
  • 1 1/2 cups Self Raising Flour

What You Do…

  1. Cream butter, sugar and vanilla essence
  2. Add eggs separartely, beating in well
  3. Mash Bananas, and then add to mixture
  4. Dissolve the bicarbonate soda in the milk
  5. The add flour and milk gradually to mixture, stirring well
  6. Bake in either 2 small greased tins, or 1 large tin… at 180°C for 35minutes or until cooked.

I usually serve this cake buttered, but you don’t have to do this.

REMEMBER: you can always slice these over ripe bananas, place in a zip-lock bag, and freeze to use in smoothies and cakes later on. Just defrost the slices before using in cake recipes.

Banana and Blueberry Smoothie

I just threw this one together a few minutes ago… and it was AMAZING!

Again there are no exact measurements…

What You Need:

  • About 4 or 5 ice blocks – REMEMBER only use ice if your blender has the power to crush it, otherwise you may break it.
  • 1/2 tablespoons of desiccated coconut
  • 1/4 cup of Blueberries – either frozen or fresh, it doesnt matter.
  • 3 to 4 cups of milk
  • 1 large Banana sliced
  • 1/4 – 1/2 teaspoon of cinnamon – you dont have to add this, but I reckon it goes great with the banana 🙂

Blend until fluffy, then enjoy 🙂

 

Berry and Coconut Smoothie

I love smoothies… So for my birthday my family gave me a blender so I could start making them myself.

Im continually inventing new combinations, but my favourites always use some sort of berries. I just throw all the ingredients into the blender, so there are no exact measurements…

What you need

  • About 4 or 5 ice blocks – only use ice if your blender has the power to crush it, otherwise you may break it.
  • 2 tablespoons of desiccated coconut
  • 3/4 cup of mixed berries – I generally use frozen berries
  • 3 to 4 cups of milk

This will make enough for about 3 or 4 glasses :)… Also I dont like very sweet smoothies, however if you want to make it sweeter simply add a spoonful or two of vanilla icecream.
